🍣 Spinach & Smoked Salmon Roll 🟢

A light, beautiful, and absolutely delicious appetizer that’s perfect for the holidays! The airy spinach sponge is surprisingly easy to make and the colors are stunning!

SAVE this for your New Year's Eve table!


INGREDIENTS:

• 150g Fresh Spinach

• 3 Eggs

• Pinch of Salt

• 50g All-Purpose Flour

• 175g Cream Cheese (softened)

• ~200g Smoked/Cured Salmon (Slightly salted)


HOW TO MAKE IT:

1. Blanch the Spinach: Pour boiling water over the spinach. Drain immediately after 1 minute. Let cool.

2. Make the Batter: Blend cooled spinach with egg yolks until perfectly smooth. Add the sifted flour and mix gently.

3. Meringue: Beat egg whites with a pinch of salt until stiff peaks form. Gently fold the meringue into the spinach batter in 3 stages.

4. Bake: Pour onto a parchment-lined tray (approx. 28x20 cm / 11x8 inches). Bake in a preheated oven at 180°C (350°F) for 10 minutes. Let cool completely.

5. Assemble: Spread a thick, even layer of cream cheese over the cooled sponge. Cover with slices of smoked salmon.

6. Roll & Chill: Tightly roll the sponge into a log. Wrap it securely in cling film and chill in the fridge for at least 2 hours, or ideally, overnight.

7. Serve: Slice and enjoy!
