Sourdough is bread made from flour, water, salt and fermented using lactic acid bacteria and wild yeast, It is universal. The French call sourdough starter "Levain", the Italians "Lievito naturale". The Ukrainians say "Zakvaska" in Poland it's Call "Zakwas", Germans call it "Sauertaig" and in Denmark it's "surdej". Spanish and Hispanic countries call it "Masa madre".
Just as there's more than one route to Rome, there is more than one way
