Spaghetti Squash Sourdough Waffles with Cheese

There is easy and delicious Spaghetti Squash Sourdough Waffles with cheese, great option for your breakfast or dinner. Crispy outside and cheese inside make these waffles extra delicious!

600g cooked spaghetti squash
2 eggs
115g sourdough starter
100g flour
100g grated mozzarella cheese
50g grated cheddar cheese
1 minced clove of garlic
1/2 teaspoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon parsley flakes
Baking the squash
Preheat the oven to 420°F. Split the medium squash in half lengthwise, remove the seeds, rub with 1/2 teaspoon olive oil each sides and then sprinkle the salt and 1/4 teaspoon pepper over the halves. Rub lightly to evenly coat the insides of the squash.
Place the squash cut-side down on the prepared baking sheet.
Bake for 30 to 35 minutes, until the squash is just fork-tender on the inside, lightly browned on the outside. Flip the squash over. With a fork, fluff to separate the strands.
Allow squash to cool completely before mixing with other ingredients.
Making the waffle batter
In a bowl, combine all the ingredients. Mix until it well combine.
Let it rest for 30min.
Making the waffles
Grease a waffle iron with cooking oil and preheat.
Spread the squash mixture evenly over the waffle iron and close.
Cook for 6-10minutes, until browned and slightly crisp. Remove and continue cooking until all bater is used.
Serve immediately! Enjoy!
Tips: If your dough is too wet, however, you can try adding more flour 1-2 tablespoons, a tablespoon at a time, until it reaches the desired consistency. It depends on your spaghetti squash.
