Making sourdough discard cheese tortillas is a delicious way to use up excess sourdough starter while adding a tangy flavor to your tortillas. Here’s a simple recipe to try:

Ingredients:
100g sourdough starter (discard works fine)
550 all-purpose flour (plus more for dusting)
350g boiling water
1/2 teaspoon salt
1 cup grated cheese (cheddar, mozzarella, or any cheese of your choice)
1-2 tablespoons olive oil
Instructions:
Mix the Dough: In a mixing bowl, combine the sourdough starter, flour, water and salt. Mix until a dough forms. It should be slightly sticky but manageable. If it's too dry, you can add a little water. If too wet, add a bit more flour.
Knead the Dough: Turn the dough out onto a floured surface and knead it for about 1 minutes until it becomes smooth and elastic.
Rest the Dough: Place the dough into the bowl, cover it with a damp cloth or plastic wrap, and let it rest for at least 30 minutes to 1 hour. This resting period allows the gluten to relax, making it easier to roll out the tortillas.
Divide and Roll: After resting, divide the dough into 8-10 equal-sized balls. On a lightly floured surface, roll out each ball into a thin circle (about 6-8 inches in diameter). If the dough sticks, sprinkle a little more flour on both sides.
Add Cheese: Sprinkle grated cheese evenly over the surface of each rolled-out tortilla. Cook the Tortillas: Heat a skillet or griddle over medium-high heat. Place a rolled-out tortilla, cheese side up, onto the hot skillet. Cook for about 1-2 minutes on each side, or until golden brown spots appear and the cheese melts.
Serve: Remove from the skillet and place the tortilla on a plate. Repeat with the remaining dough balls.
