Golden Cottage Cheese Cookies

Ingredients
• 350g Cottage cheese (Farmer's cheese/Quark)
• 250g Butter (cold or slightly softened)
• 400-450g All-purpose flour
• 1 tsp Baking powder
• 1 packet Vanilla sugar
• 100g Sugar (for coating/sprinkling)
Instructions
1. Prepare the Base: Mash the cottage cheese with a fork or blend it until smooth if you prefer a uniform texture. Grate the cold butter into the cheese or cut it into small cubes and mix.
2. Mix Dry Ingredients: Sift the flour and mix it with the baking powder and vanilla sugar.
3. Knead the Dough: Gradually add the flour mixture to the cheese and butter. Knead until you have a soft dough that doesn't stick to your hands. Don't overwork it, or the cookies will be tough! Wrap in plastic and chill in the fridge for 30 minutes.
4. Shape the Cookies: Roll out the dough to about 3mm thickness. Cut out circles using a glass or a cookie cutter.
5. The "Sugar Fold": Press one side of a dough circle into the bowl of sugar.
6. Bake: Place the cookies on a baking sheet lined with parchment paper (sugar side up). Bake at 180°C for about 20–25 minutes until they are a beautiful golden brown.
